Gin, Pear & Honey Yogurt Popsicles | #popsicleweek

It’s Popsicle Week! Every food blogger and their brother have been making a variety of popsicles and sharing them across the Interwebs for Billy of Wit & Vinegar's #popsicleweek. Can we all agree that popsicles are kind of the best? And these Gin, Pear & Honey Yogurt Popsicles are just what the doctor ordered. I am so excited to be sharing the recipe with you all. They are sweet, creamy, and a bit boozy. Perfect for a hot summer day! And with the 4th of July just around the corner, you can make these ahead to serve at your holiday cookout. Enjoy 😊

Gin, Pear & Honey Yogurt Popsicles

Simple syrup recipe adapted from Zestuous




    For the spiced simple syrup – yields 2 cups 

¾ cup plus 1 tablespoon granulated sugar 
¾ cup honey 
1 cup pear, peeled, cored and chopped 
2 tablespoons fresh ginger, chopped 
1 cup tonic water, or regular water 
½ cup gin 
1 cinnamon stick 
½ teaspoon vanilla extract 
Pinch of kosher salt 

    For the popsicles 
1 ½ cups of the prepared pear simple syrup 
1 ½ cups Greek yogurt 





For the simple syrup. Add the chopped pears and sliced ginger into a medium sauce pan. Toss in the 1 tablespoon of sugar and cook over medium/high heat for about 5 minutes until tender. Add the rest of the sugar, honey, tonic water, gin, cinnamon stick, vanilla extract, and salt and bring the mixture to a boil. Reduce the heat to medium/low and cook for 10 minutes, until the liquid has reduced and the syrup is thick. Strain the liquid through a mesh strainer and pour into a mason jar or heat proof container. Allow syrup to cool completely before storing in the fridge to chill. 

For the popsicles. In a 2-cup liquid measuring cup, whisk together the yogurt and 1 cup of the chilled pear simple syrup. Divide mixture into 8-10 popsicle molds and chill until the popsicles are set, about 3-5 hours (preferably overnight).  


Note: You will have 1/2 cup of simple syrup left over after making the popsicles, so obviously you gotta make some gin and tonics! Place ice cubes in chilled glass (the cubes should come near the top.) Add 3 ounces of gin, 4 ounces tonic water, & 1.5 ounces of the pear simple syrup to each glass and stir to combine. Garnish with fresh mint and sliced pear. Yields 2 -3 drinks.
